Moya Fleming – Mushroom Vol au vents
6 oz mushrooms chopped
clove garlic
2 teaspoon grainy mustard
2 spring onions chopped
2 tablespoons Parmesan cheese or ˝ cup grated cheese
Make a roux – melt butter – 1 tablespoon flour milk to mix Add garlic spring onions mushrooms which have been zapped in the microwave 1 – 1 ˝ minutes
Add cheese and grainy mustard.
This also works well with asparagus or salmon

Spoon Watties Mexicorn into cases Sprinkle a little grated cheese on top and heat for 10 mins in a moderate oven

100g Mushrooms
100g Spring Onion
100g Cream cheese
1 teaspoon Basil
Salt and Pepper
Finely chop mushrooms and spring onion Fry 1- 2 mins In a separate bowl mix cream cheese seasoning and basil Stir in mushroom mixture Spoon into vol-au-vent cases and heat through
