
Pork
Sweet and Sour Pork (Chicken Prawns or Fish could be substituted)
1 tablespoon oil
500g thinly sliced pork
½ small onion diced
½ cup sliced celery
½ cup sliced red capsicum
225g can pineapple pieces in natural juice
2 tablespoons tomato sauce
2 tablespoons sugar
1 teaspoon soy sauce
1 ½ tablespoons brown vinegar
3 teaspoons cornflour mix in ¼ cup water
Sliced spring onions to decorate
Brown pork in the oil Remove pork from the pan add vegetables and saute for 3 mins Drain pineapple - reserve juice and put pineapple pieces aside
To juice add the tomato sauce sugar soy sauce vinegar and cornflour mix
Add pork to vegetable and pineapple pieces in pan pour over sauce and allow to thicken Serve in 100mm vol au vents and sprinkle with spring onions
