Brandied Peppercorn Turkey

½ quantity of prepared White sauce
1 cup diced cooked turkey
1 teaspoon Masterfoods French Mustard
2 teaspoons Brandy
2 teaspoons drained green peppercorns
1 teaspoon finely grated lemon zest
2 tablespoons sour cream

Combine turkey with the above ingredients in a saucepan over moderate heat and add to base mixture with salt and pepper to taste Store for up to 24hours in refrigerator until required

Yield 380g

Turkey Mint and Cherry ( 6 large 100ml vol au vent)

½ quantity of prepared White sauce

Combine 3 cups Chopped leftover turkey 2 tablespoons Masterfoods Mint jelly 2 teaspoons Masterfoods French Mustard 1 clove crushed garlic 2 chopped spring onions and 1 cup sour cream Carefully fold in 1 can drained pitted John West Black cherries
Add to mixture with salt and pepper to taste Store for up to 24hours in refrigerator until required
